It's that I could find. I do not see why it can replace the tomato with pineapple (honey and maybe less) if you want.

Shrimp with coconut milk
Ingredients:
3 / 4 lb. peeled, cleaned shrimp, fresh or frozen
1 / 3 cup coconut milk
4 tablespoons white rice vinegar
1 tablespoon liquid honey
1 / 8 c. Tea or red pepper to taste
2 v. Tea cornstarch
2 1 / 2 tablespoons peanut oil or vegetable oil for frying divided
1 / 2 teaspoon chopped fresh ginger
Salt 1 / 2 teaspoon
1 cup diced tomato seeds, cut
1 to 2 teaspoons Chinese rice wine or dry sherry, optional
2 to 3 tablespoons chopped parsley or cilantro, optional
Preparation:
If you are frozen shrimp, thaw under cold water and blot dry. Remove shrimp tails.
In a small bowl, combine coconut milk and vinegar. Whisk the honey, red pepper, and cornstarch.
Heat 1 1 / 2 tablespoons oil over medium heat. When the oil is hot, ginger and fry for a few secondsa. Add shrimp and salt. Fry the shrimp 2 minutes, until pink to make them. From the wok.
1 tablespoon oil in a wok. When the oil is hot, add the diced tomatoes. Sauté for a minute, then press the page and add the shrimp pan. Fry the shrimp for one minute, sprinkle with a bit of Chinese rice wine or dry sherry, if desired. Press the sides of the tomato.
Beat again and pour the sauce to thicken in the middle of the wok, stirring quickly. Fry the shrimp and tomato sauce a minute to mix everything. Add the chopped parsley or coriander.
